"fior di sale" salt from moranella saltpan
This salt emerges in our saltpan
as a soft foam in very particular atmospheric conditions, it is light and
soft and it is deposited at the tank margins by the wind.
It is harvested and handmade with traditional methods; it is also devoid of
any kind of chemical treatments and it keeps all its elements low in mineral
content.
Light and soluble crystals characterize this white salt that has a smaller
quantity of sodium chloride and a bigger quantity of potassium and magnesium
than common salt; fluorine, iodine, sulphur and calcium make it more soluble
and complete.
A small quantity of "fior di sale" is sufficient to salt dishes and, because
of its organoleptic characteristics, it is used by the best chefs of the
world to prepare sophisticated dishes.
Our saltpan, active since 1884 and called Moranella or Chiusa, is situated
within the nature reserve of Trapani run by the WWF. It is usually
frequented by different migrant species and it also gives hospitality to
purple herons and principe grey parrots.
The saltpan is used only for ecological and biocompatible productions,
exploiting natural elements such as the sun, the wind and the sea water
evaporation. During the summer it is possible to feel with us, in the
shining whiteness, the emotion of the salt harvesting that takes place with
traditional systems.
